Raw Chocolate Ice Cream
2 Frozen Bananas
2 tsp Nut Butter (almond, cashew, hazelnut or coconut all work well)
2 tsp Raw Cacao Powder
4 tsp Maple Syrup
Cacao Nibs (for sprinkling)
Freeze the bananas by peeling them, chopping them into pieces and putting them into a container.
Once frozen, put them into a blender and blend until they begin to break up.
Add the other ingredients (apart from the cacao nibs) and blend until smooth and creamy.
Put into a bowl and add the cacao nibs.
This can be eaten straight away, or kept in the freezer.
Raw Chocolate & Date Brownies
1 Cup of Cashews
1 Cup of Dates (soaked for a few hours)
5 tbsp Cacao Powder
2 tbsp Maple Syrup (you could also use coconut nectar, or if you aren't vegan you could use raw honey)
1/2 tsp Vanilla Extract
Handful of Cacao Nibs
Blend the nuts until they turn powdery, then add the dates and blend until they are fully mixed together. Next add the cacao powder, maple syrup and vanilla and blend for about a minute.
Mix in the cacao nibs and place in a square dish, press down and place in the fridge for a few hours. Cut into small squares, and enjoy!
